Teachers use quizzes and homework to assess how well students have learned what they were taught which isn't all that an effective since homework can be copied.
A more effective method, though much harder is to keep track of how well each student in your class has learned everything you've taught. You could use continuous assessment tests or maybe even "pop" quizzes to assess how well each student is making progress and use the information you obtain to secure better results in future.
